Hey Been A While... Beer

Hey guys how are you? It's been awhile... Hope you guys are all doing great! Looking through the old posts I just noticed some of you, or Eric at least, are into craft beer! Just wondering if this is catching on wherever you are. Finally seeing real beer being served in more places in Miami. Also, Eric, have you tried brewing anything else since the pale ale in December? Just wondering, we're interested in trying down here in Miami and would be curious about any advice you have to offer. Happy brewing!

that title made me think of a recovering alcoholic who was about to fall off the wagon

I just finished brewing a clone of Victory Hop Devil. It's in the kegerator now. It's really close to the real thing, maybe just a touch sweeter. Alex is getting into the homebrew game now; I just helped him start a clone of Magic Hat #9. If you're interested in trying it, check out homebrewery.com for brew kits, kegconnection.com for keg kits, and austinhomebrew.com for ingredients in kits or separates. It's a great hobby, let me know if you get started.

I just made a Polish Rye Beer Bread with Victory Hop Devil today! That's funny. Pretty neat that you can make your own beer that are so similar to famous ones. You guys will have to come visit VT and taste the delicious #9 fresh off the production line!

As far as brewing, I really want to try to make a Belgian style Tripel. Have you made any high alcohol brews? How does the process for home brewing differ with those ones?

A tripel, by definition, is just a very strong pale ale, a style originating in modern day Netherlands/Belgium. The brew process does not differ too much from the norm, especially if using extract. Candy sugar is added to increase fermentables and therefore increase % alcohol, and I can only assume fermantation would take longer than usual.
